Campfire Pound Cake & Berries

An easy dessert to indulge any sweet tooth while off the grid. We will sometimes top with a bit ofvanilla ice cream since we have the luxury of a small freezer in our set up. No freezer? No problem, whipped cream does the trick, too. Chocolate chips or any other chocolate candy works well to melt on top of the warm pound cake. The possibilities are endless!

Ingredients
  

  • 12-16 oz Fresh berries of your choice (I prefer strawberries & blueberries)
  • 2 tbsp Sugar
  • ¼ cup Butter
  • 1 lb Pound cake (either bakery fresh or frozen), cut into 1” cubes
  • 2 Hershey’s chocolate bars, broken into pieces
  • 1 scoop Vanilla ice cream or whipped cream, garnish (optional)

Instructions
 

  • Wash berries and cut as needed (ex. quarter the strawberries). Combine berries and sugar in a small bowl and set aside.
  • Place large cast iron skillet on heat source (.ie. campfire, stove, grill). Add butter to skillet and let melt. Add cubed pound cake into the skillet, stirring often until all sides of cake are toasted. Remove skillet from heat.
  • Add berries and chocolate pieces to the toasted pound cake. Cover with foil and let sit until the berries are warm and the chocolate has melted.
