Dark Molasses

Orange Juice
fresh squeezed if possible

Oil for brushing the meat

Molasses Glaze
Instructions
For the Glaze
Heat oil in a small saucepan over medium-high heat add onion and cook till soft (4-5 minutes)
Add garlic and ginger cook 2 additional minutes
Add rum reduce until completely dry
Add molasses, orange juice and pepper
Add a pinch of salt
Cook until reduced to 1 cup (15-20 minutes)
Let cool at room temp
For the Filet
Preheat grill (gas or charcoal) to medium heat
Brush the meat with oil and season with salt
Sear one side on grill (2 minutes)
Turn to sear other side (2 minutes) baste with glaze
Turn meat and baste every minute until cooked to your desired doneness
Let rest 10 minutes slice meat add any additional glaze and serve
