Black Pepper and Molasses-Glazed Filet Mignon
Course Dinner
Ingredients
Molasses Glaze
- 2 Tbsp Oil I prefer Avocado Oil
- 1 Small Yellow Onion finely chopped
- 2 Cloves Garlic finely chopped
- 1 Tbsp Ginger grated
- ¼ Cup Dark Rum
- 1 Cup Dark Molasses
- 3 Cups Orange Juice fresh squeezed if possible
- 3 Tbsp Fresh Cracked Pepper
- TT Salt
The Filet Mignon
- 2 Oz Filet Mignon
- Oil for brushing the meat
- TT Salt
- Molasses Glaze
Instructions
For the Glaze
- Heat oil in a small saucepan over medium-high heat add onion and cook till soft (4-5 minutes)
- Add garlic and ginger cook 2 additional minutes
- Add rum reduce until completely dry
- Add molasses, orange juice and pepper
- Add a pinch of salt
- Cook until reduced to 1 cup (15-20 minutes)
- Let cool at room temp
For the Filet
- Preheat grill (gas or charcoal) to medium heat
- Brush the meat with oil and season with salt
- Sear one side on grill (2 minutes)
- Turn to sear other side (2 minutes) baste with glaze
- Turn meat and baste every minute until cooked to your desired doneness
- Let rest 10 minutes slice meat add any additional glaze and serve
